6:42 pm ....OK, I pulled it off. Dinner was great.
Joe V's cooking tips: Chicken wings* (duh, drumsticks, not chicken wings) and breasts with Italian Parmesan dressing. Saute' in refrigerator in the morning.
Put in the oven at 1:45 pm for 4 pm dinner, cooked at 225F for 1 hour. Then to 325F for another hour. Came out perfect.
The Broccoli and Cheese Gratin (proper name products) was supposed to be 375f but I put it in with the chicken and once the chicken was out, upped it to 385F. It came out fine.
It was so much fun putting this together. Invited a lot of people but we had the right amount. So many friends went out of state (one family went out of the country!) but all good vibes via e mail and text and here we are. See, I can do more than put together good public records requests!

(We skipped the mashed potatoes...we already had plenty...had stacks of stuff in fridge and freezer

Cooking Temperature for Baked Chicken Breast
There is no right temperature for baking chicken breast. It can range from 225F to as high as 450F. The challenge is that at 450F the internal temperature of the chicken rises from 30-40F to the USDA recommended safe temperautre of 165F in 15 minutes or so. The chicken is in the oven, a saute' with Italian dressing, it's going to be great. I like Christmas like this...no shoveling, cooking. Got a lovely gift from old friends last night so they are coming over, a little get together. Rustling up a nice little feast.

We have a LOT to be thankful for.
Breanna Lungo-Koehn as mayor is going to be a great new start. 32 years of a city under the control of Mike McGlynn, which extends back 30 years prior to that, and the outside world didn't see, or know, the control the McGlynn family had over Medford for sixty years or so.
That's just plain wrong.
There is a REVOLUTION, but not the one they are promoting out there. We've been having a real revolution for the better part of a decade and a half...and good things are in the wind for Medford...change is about to come!
